Lots of interesting and useful information in this class. If you want to take proper care of your knives this is definitely the class to do. Charlie's English is excellent, his instructions are clear and he is keen to answer your questions.
Charlies explanations were clear and concise. He is knowledgeable and demonstrates so you can easily understand. I'm looking forward to sharpening all my knives.
Wonderful experience. Learned so much about Japanese knife history and styles. The lesson in how to sharpen our individual knife was brilliant. Would definitely recommend giving it a go.
Great experience. Charlie was very knowledgeable and helpful. Thanks!
Relaxed atmosphere and knowledgeable instructor made the experience really enjoyable.
Typical small shop; easy to miss. Excellent presentation on knives and metals used in their production. Learn where real Japanese knives are crafted. Hands on learning patiently taught. Charles took the time to review our progress at every step. Worth the time and money. Go before you purchase a knife.
Fantastic experience. I wanted to buy high quality knives while in Japan and know how to sharpen them (as well as general knives and scissors around the home. This course taught me all the techniques and the progression of the techniques to bring knives from various states of bluntness or damage to razor sharpness again. I learnt the pros and cons of, each metal type, which whetstones and grades of abrasiveness to use for each stage of sharpening/finishing/polishing. After the course i knew exactly which types of knives i wanted to own (and be able to maintain). I bought a set of ebony handled, carbon steel blades from Musashi (who run the course), and ordered ceramic (splash and go) whetstones (1000, 5000 grit) from Naniwa, as well as a bridge, basin and leather paddle from other stores. This learning experience was foundational.
Had an amazing & knowledgeable time with Charlie. A must do in Kappabashi.
Great time, instructor Charlie was patient and very knowledgeable, if you’re interested in Japanese cutlery this is a must do experience in Japan.
Great Experience, we would recommend this to all. Charlie is very knowledgeable and gave a great lesson, he explained the process in great detail.
Charlie was an amazing teacher and we had a great time. Must do if interested in cooking as a sharp knife is a must! Well worth the price
Highly recommend this class, really learned a lot and Charlie is an excellent instructor - very knowledgeable and great at communicating the skills.
I found the lesson to be quite informative regarding proper knife sharpening/polishing technique. The atmosphere was nice too, adding to the overall experience. My instructor’s name was Charlie and he was good at providing an engaging lesson. I highly recommend to anyone curious or interested, you are in for a treat.
Charlie was a wonderful teacher. Answered all of our questions and was accommodating. Perfect English and very knowledgeable. Highly recommended!
A well taught class by our instructor Timothy. You definitely learn what you need to do to get a razor sharp knife. They also start you off with a really dull knife that can hardly cut thru paper and you end up with one that can slice thru a rolled up tube of paper standing on its own. Also picked up a sharpening stone from a nearby recommended shop.

We celebrated my boyfriend’s birthday at Fuji Japan, and it was such a special experience! He loves cooking, so learning how to sharpen and use traditional Japanese knives together made the day unforgettable. The instructors were patient and friendly, guiding us step by step while sharing the beauty of Japanese craftsmanship. It was hands-on, fun, and deeply cultural, the perfect activity for couples, food lovers, or anyone visiting Tokyo. Highly recommended if you’re looking for a unique and meaningful experience in Japan! 🔪
It was a very nice experience! The detailed explanation of the knife itself was very convincing!
We tried hands-on knife sharpening in Tokyo and it was such a fun and unique experience! The staff guided us patiently, and we learned so much about Japanese craftsmanship. Perfect for travelers looking for something cultural and interactive!
It was a really nice experience! You will learn a lot, Tim is very enthusiastic in teaching the basics of knife sharpening, and you will enjoy a delicious cucumber dip in a sauce specially prepared by Tim himself. Highly recommended!
I participated with my boyfriend and we had such a great time! It was an interesting experience, and the teacher was really knowledgeable. They showed us how to sharpen a knife correctly. By the end of the session, we also got to make a cucumber snake using the knives we had sharpened. I totally failed, but my boyfriend made a perfect one 🐍 I can highly recommend this experience, not just for tourists, but for Japanese people as well!
The friendly lecture in a lovely, quiet and relaxing space was a refreshing experience! It was also great to be able to try out some beautiful Japanese knives!
Interesting experience, where I could learn a lot of information about knives and on how to properly sharpening them. Tim is really helpful and knowledgeable, and this is an experience that I absolutely recommended for those with interest in kitchen stuff.
Taking the traditional Japanese knife sharpening class was an incredible experience that I will never forget. It was truly moving to immerse myself in the art of sharpening knives the way it has been done for generations in Japan. Huge thanks to our teacher, Tim, who kindly and respectfully introduced us to the fascinating history and types of Japanese knives. He then patiently guided us step by step through the sharpening process, making sure everyone felt confident and engaged. One of the highlights was that my package included a beautiful knife as a gift and the best part was getting to sharpen it myself, following the traditional techniques. It felt meaningful and empowering to hold a tool I had personally brought to life with my own hands. I would highly recommend this class to anyone interested in Japanese culture, craftsmanship, or simply in search of a memorable and enriching experience.
I had an amazing time learning about the art of shaping Japanese knives! The team was incredibly knowledgeable and welcoming — they took the time to explain each step with patience and passion. It was a truly hands-on and inspiring experience that gave me a whole new appreciation for the craftsmanship behind Japanese blades. I highly recommend it to anyone curious about traditional techniques or simply looking for a unique and memorable experience. I will definitely be back!
One of the most memorable experiences I’ve had in Japan! The knife sharpening workshop at FUJI JAPAN was both educational and hands-on. The staff were incredibly accommodating, patient, and clearly passionate about what they do. They guided us through each step of the sharpening process using traditional whetstones, and I was so proud to take home the knife I sharpened myself—it felt like a personal achievement. We also had a fun session practicing Jabara Kyuuri, a decorative cutting technique that makes a cucumber curl like a shrimp. It was a great way to apply the skills we had just learned and added a creative touch to the whole experience. I highly recommend this to anyone interested in Japanese craftsmanship, cooking, or just looking for a unique activity while visiting Tokyo. A truly unforgettable experience!
I tried traditional knife sharpening for the first time in my life — it was an unforgettable experience. I especially enjoyed slicing a cucumber and testing the sharpness by cutting paper.
Very good class on knives, their origins and evolution, as well as the entire sharpening process, common problems, and how to avoid and repair them. A different workshop, in perfect English and very useful for those cooking enthusiasts looking for something different during their visit to Japan.
Great course! Much learned, highly recommended
It was a fantastic experience. We came in with a little sharpening experience and still learned a lot. On figuring out where the burr is, the angles to keep and how to use the weak hand. Fortunately there were only two of us so I could ask many questions to which I received complete answers. Highly recommended for everyone.
I took some sharpening lessons on kitchen knives for vegetables and had a lot of fun. He explained the method in detail and introduced the reason and the points in an easy-to-understand way even if it was not only how to sharpen.
