Great experience. We enjoyed learning how to make mole, tortillas and quesadillas. We walked a few blocks to the Mercado got the ingredients and walked back to the location to make the food.

Great experience learning about Mole. It was very interesting and we enjoyed the hands on preparation of all the different foods. Highly recommended.
The class was fantastic. The instructor was so knowledgeable . We went to a market to buy all of the ingredients. And then we came back to class to cook Mole and two types of salsa and tortillas and quesadillas and rice with herbs. Everything we cooked and ate was delicious. Make sure you come hungry.
This was an excellent experience. It was a cool cooking class and you go to the local market to get the fresh ingredients. My host was excellent she was very personable and knowledgeable and the food we made came out excellent. I’d highly recommend this tour to anyone!!
Wendy was excellent! She took amazing care of us. We did not expect to cook and eat as much food as we did. Walking to a local market to get ingredients and meet the vendors was a highlight! We would recommend this to anyone and will plan to take other classes in the future!
Wendy took amazing care of us. Her English is excellent. We did not expect to get to visit a market, which was AMAZING! Highly recommend. Great deal for the price and we left super full.
I really enjoyed this vegetarian cooking class! The chef was very informative and made the experience fun and interesting. I especially enjoyed the market shopping and learning about the different spices, ingredients, and local flavors. A great way to experience Oaxaca through its food and culture!
The class was wonderful i learn so much, the visit to the market was fabulous. It’s a great experience I recommended it.
This was more than just a cooking class… it was a dive into true Oaxacan culture through its people, food, techniques and love. I would absolutely recommend this class to anyone visiting Oaxaca! Truly worth every single penny!
The mole cooking class was one of the greatest experiences that I’ve had in 6 months of travel around Latin America. As someone who enjoys cooking, getting to be a part of the whole process of making the dish, from going to the market, prepping all of the ingredients, cooking, and finally eat the meal was exactly what I was hoping for. Wendy is a fantastic teacher and a great person to chat with about Oaxaca and cooking. I absolutely recommend this class.
We had so much fun! The experience starts with a visit to a nearby market to pick out ingredients emphasizing how the chef centers the local community in the class. Besides learning to cook mole and a few salsas, we also learned some Oaxacan history through the process.
I learned so much about the Zapotec culture and the history and evolution of molé. Our guides were fantastic! The chef allowed us to fully participate in the preparation and execution of the meal. It was beyond deliciosa!! And so fun!!
We loved the experience! The food was so good and sourced from a local mercado. The chef spoke both english and spanish, and asked us which we preferred. When we chose Spanish, she was very good about checking for understanding and explaining things multiple ways when needed. We enjoyed a delicious feast together at the end! It was about 4 hrs. The first 30-60 minutes was shopping, another 90 minutes or so of prep and cooking with plenty of tasting along the way, and then the feast!
I took part into the Mole cooking class, which was something more than just a cooking class! We learnt about tradition, food, culture and we had a really good time. The group was small, just four of us. We went to the local market, the chef told us everything about the different local fruits and vegetable and then we cooked a salsa, yellow mole, and we made tortillas and quesadilla ourselves! After the cooking we enjoyed eating together. It was a really nice experience, the chef explained us all everything and was both friendly and helpful! I strongly recommended it.
Victor was an absolutely brilliant host and teacher! The class was great, with lots of things to try and learn, and a delicious meal at the end. Thank you so much to Victor and the team!
This tour is the full deal - wonderful tour through the market with samples of local fruits, veggies and chocolate. Then, our amazing chef Victor and helper Wendy, put us to work and make every element of the meal. We appreciated the guidance and liberty to learn how to make this authentic Oaxacan meal, straight from his grandmother’s repertoire. Highly recommend.
Chef Victor is so passionate about reviving indigenous culinary knowledge. It makes this experience stand out from a typical cooking class.
Wonderful experience! I will definitely recommend this to others. We shopped in the local market, learned the history of mole, and cooked an authentic meal. It was located in a beautiful location so the walk there was a treat. 5 stars!
This organization is deeply committed to traditional sustainable agriculture and cooking in the region. We went to a local artisan market and purchased ingredients, tasting many. We returned to the well-outfitted kitchen and prep area where we learned how to cook by doing it ourselves. We made mole, two kinds of salsa, rice and tortillas. It was great fun for a great value.
We did a mole class nd Lao. Chocolate making class. Both were excellent. Stuff was wonderful, very friendly and informative. Highly recommend it.
Chef Victor and Chef Wendy are spectacular hosts making this experience fun, educational, and delicious! We took a short walk to a local market and learned about the ingredients and history of mole and about local vendors. Back in the kitchen, the instructions about the preparation and cooking process were thorough and interactive with other guests. Sitting down to enjoy the fruits of our labor was another great experience. This truly was an outstanding event.
Instructor was friendly, spoke good English, answered questions and was very helpful. It’s a hands-on experience and you learn a lot about the different vegetables and ways to prepare tortillas, salsa, and Green Mole.
Victor, our shift and instructor was absolutely fantastic! There were four of us friends with several other couples who we met in the class. All of us agreed that Victor was an excellent teacher and a lot of fun. We will gladly recommend Victor and this cooking class to Friends.
This cooking class was a brilliant way to spend time in Oaxaca and immerse yourself in the culture in a friendly and welcoming environment. The trip to the market was very insightful and provided an authentic and valuable experience. Though there were a lot of us present, our guides went to great lengths to make sure we were all comfortable and having a good time and really took the time to answer our questions.
Victor was wonderful as was the food we prepared under his guidance. What a convivial, educational and delicious experience! I highly recommend this opportunity to learn about the heart and soul on preparing a mole’!
This was one of the highlights of our trip. We enjoyed a great dinner that we cooked as a group and learned a lot about Mexican fruits, vegetables and cheese.
This was one of the best tours we’ve ever taken. We really enjoyed visiting the Mercado to pick out our own ingredients. The food was fantastic, and it was great to be in a small group from around the world, cooking recipes that our Mexican ancestors used to make. If you're in Oaxaca, be sure not to miss this tour.
This was easily the best mole I’ve ever had and an amazing experience. We had the Coloradita mole and it was so flavorful, complex, delicious and all the accompaniments were sublime. I will try to reproduce this mole in the future. This has been the best experience so far in Oaxaca. You MUST try this!
I really enjoyed the cooking experience, and then having the meal. My only issue was how to choose alternative ingredients if the recipe ingredients aren’t available.
We thoroughly enjoyed this experience starting with the walk through the local market to select ingredients, to the hands on preparation of the mole, sides, salsa and tortillas to finally enjoying the meal we helped prepare. Chef and his assistant were great.
The meal that we prepared with the guidance of our chef, Victor, was hands-down the best meal we've had in Oaxaca, and we've eaten at several celebrated restaurants here. We learned about the unique ingredients that are used in Oaxacan cuisine and the traditional Zapotec and Mixtec methods of preparing these dishes. It was incredibly interesting, and resulted in an amazing and memorable gastronomic experience. We highly recommend this cooking class.
The cooking class was exactly what we were looking for. The trip to the market was informative. And the hands on experience cooking mole and other dishes was fantastic. Our instructors were friendly, fun and helpful. We would recommend this to anyone who wants to learn about traditional Oaxacan cooking.
This was all hands on, with a delightful instructor, Chef Victor. We first visited a local collective to pick up ingredients. Meeting local venders and producers. Returning to a fully prepped kitchen with ample room. We learned the history of the region and food through Victor’s personal experiences and his family. We tasted and sampled ingredients and learned how and why local cooking processes attain results particular to Oaxacan cuisine. All questions were answered and allowed to film and take pictures. This experience will significantly up my game of cooking. Definitely returning next year for a longer visit and more classes.
my best cultural experience in and around Oaxaca during my 8 day visit. Our chef was joyful, informative, and awesome in every way. It was far more engaging than I envision and the lunch was spectacular. do it!
Chef Victor gave our group a wonderful experience. He shared both a personal and historical perspective on food.
Chef Victor was a great teacher not only for cooking the mole but also, and perhaps most importantly, about the indigenous ingredients, methods, and traditions. Really cool what they are doing here. In my class everything was vegetarian and super delicious!
Our mole cooking class with Victor was amazing! I loved how we got to go with him to the market, select ingredients and received so much information about each ingredient and historical context. Throughout the class he also did a great job engaging each participant and has us work together in a way that felt communal and not awkward when you meet new people/strangers. The class flowed so smoothly and casually that it felt like we were cooking at home in his own kitchen. I've taken many cooking classes before and they sometimes can feel rigid with instruction on how to cook "properly" but Victor created such a warm environment with instructions that allowed all of us to prep and cook in ways we felt comfortable with.
No words can describe how amazing this experience was. So authentic, informative and delicious! Victor was the most amazing chef/ guide and he introduced us to the wonderful and varied ingredients in this part of Mexico. Definitely recommend!
Great experience. Victor Ramirez is a great chef and very passionate about both his profession as a chef and the Oaxacan kitchen. The prepared dish was delicious and we’ve learned a lot about the Oaxacan kitchen during the class. Would recommend if you like cooking and want to learn about Oaxacan and Mexicaan food!
It was a great class with delicious food. Robert and his team were excellent teachers. Can't wait to go home and cook this for my friends
Far and away one of the best cooking classes I've ever done! Our guide, Victor, was friendly and informative. He showed us so many unique parts of Oaxacan culture and cuisine. Our class was easy to follow and very inspiring. It really showed me that cooking unique Mexican dishes like Mole is much more approachable than I first expected. I highly recommend this course!
Victor's cooking workshop was truly a highlight of our trip! Him, Yael and Pablo were knowledgeable and kind hosts, showing us the different varieties and techniques of indigenous Oaxacan cuisine. The whole cooking journey was very well structured: from the visit to the market, explanation about ingredients, cooking processes and the final meal. As a vegetarian I loved learning how to create flavourful, traditional dishes without animal products and feel like I walked away with a much richer understanding of the culinary world of Oaxaca and Mexico. Victor created a friendly and inclusive atmosphere for all the participants. I honestly can't recommend it warmly enough!!!
Excellent experience with a hospitable local cook. 100% recommend. Going to the market to get the ingredients was a nice touch.
We took this class as a family and had a fun experience overall! That said, there are a few things that could be improved. We made mole amarillo, which is one of the quicker types of mole to prepare, and had it with chochoyotes (masa dough balls) instead of any meat. The full meal included the mole, rice, and quesadillas we made ourselves. It was tasty, but a bit simpler than we expected. The setting could also be more appealing. During our visit, there was construction happening outside, and the cooking space wasn’t a traditional kitchen—it felt more like a room adapted for the class. Still, we learned a lot and enjoyed cooking as a family!
An incredible experience, you get a true sense of community, learn a lot about Zapotec culture, and make delicious food!
The mole workshop was amazing. It was vegetarian and could have been vegan except the tetelas had a bit of quesillo on them. This workshop is more than just mole. We prepared yellow mole, sauteed potatoes, sauteed oyster mushrooms, tortillas, tetelas, salsa, cut fruit, and a refreshing drink made with cucumbers, lime, and mint. Every dish was delicious. The cook and her assistants were charming, knowledgeable, and helpful. I highly recommend this experience.
Chef Victor taught an amazing class on making traditional mole. My mother and I were fortunate to have taken this amazing class on traditional mole in Oaxaca, Mexico. The class came with informational facts about Zapotec culture and tradition. The walk to the market with chef was so cool and definitely had such a friendly atmosphere along the streets. Chef explained everything step by step and shared his tips with us. Truly an awesome guy!
Our experience was great. We started going to a smaller, local market to talk about and purchase our ingredients and all the local fruit we wished to try! Then walked back to the commissary kitchen and got to work as a group. We learned about the culture, food and traditions. We prepared two salsas and an amazing meal of veggies, rice and mole. We also used masa to make tortillas and quesadillas. It was so much fun learning, cooking and eating with such a great guide and group! Thanks Victor
It was a relaxed course in a cool location and I learnt everything I imagined. We firsted went to the market, then prepared everything together.
This class was a thoroughly wonderful experience! Etnofood is a beautiful space in Centro and Victor was a delightful instructor. He started by taking us to the nearby market, explaining the history and significance of the dishes we were about to make and then giving us background on produce and cheese at the market. This was also a great thing to do early on in your trip so you can be more familiar with the offerings at the markets for the remainder of your trip! Then we went back to Etnofoods where we proceeded to cook multiple recipes passed down from Victor’s grandmother. Everything was SO good! It was all vegetarian but if you are a meat eater (I am) trust me, you won’t miss the meat at all. It was a filling and delicious meal. Victor is a great teacher- informative, knowledgeable and passionate about bringing Zapotec culinary history to visitors to Oaxaca. I can’t recommend this class highly enough, I definitely plan to bring friends and take it again next time I’m in Oaxaca.
