Wonderful personable experience cooking traditional and pre Hispanic dishes! We got to visit the market and the farm was incredible. If you like to cook and don’t mind spending 4-5 hours doing so, I would highly recommend.
What a deal!!! Miguel, Jose & Vicky were the absolute best! If you truly want to immerse yourself into the culture, don't miss this opportunity. Explore the local market, garden, farm animals, culinary history & so much more. Such a hands-on experience. No set menu, rather they take the time to get to know you & your interests in learning. Nothing like tasting your hard work. Get recipes at the end to take home. Would absolutely do this tour again if I ever come back to Oaxaca.
Wow, this was an amazing day of delicious food and incredible sharing of knowledge. Miguel, Vicky and Jose Antonio were so open to teaching us about their culture and cuisine. This is a must if visiting Oaxaca
Miguel and José were such amazing hosts from the introduction through the to the feast at the end. The class was so diverse, extremely interesting and captivating. With each step of the way really taking there time to explain a bit of history, technique, and the locally sourced produce. Well worth attending a fabulous experience
A wonderful way to spend a morning in Oaxaca. Miguel and Jose are so kind, teaching you every step, from making homemade tortillas all the way to mole. They offer as much or as little info as you want. A favorite experience of ours in Mexico! The setting is a beautiful outdoor kitchen and garden with two of the sweetest dogs for additional company!
An exceptional culinary adventure awaited me at an authentic Oaxacan farm. Despite being the sole guest on this particular day, Miguel and his remarkable staff ensured a comprehensive experience. From a personalized driver to pick me up, to a tour of the farm grounds, a shopping trip to the market, and a history lesson on Oaxacan cooking through the ages, every detail was meticulously arranged. And of course, the pièce de résistance was a delightful four-course meal that left me thoroughly satisfied.
Very educational. The class starts with a ride in a comfortable van to a destination about 20 minutes from the Center. It was a wonderful learning experience. The only thing I didn't like was going to the market. It was a long walk but the host gives the group the choice of what they want to cook which is why we had to go to the market. He has a wonderful authentic Oaxacan kitchen. He is a wonderful host and a good teacher. I used to be a chef so I prefer to observe , but my group loved it. Plan to spend the whole day . Like 9am to 3 pm. Great food ! We learned how to make tortillas from scratch. and we got to eat everything we made. Great fun and our host has a mini farm and a wonderful herb and vegetable garden. The class is outside and we eat at a picnic table with a covered roof. And at the end of class we sit down together and enjoy the meal we created together. Highly recommend
It was amazing. Jose explained everything for us and answered all of questions, . Everything was easy to learn and bring those recipes bring home to make for my family. Miguel Angel was great he also stepped in to help giving us some cooking tips . Thank you for having me in your home, the farm with all the fresh fruit and veggies was great. Look no further if you are looking for a cooking class.
This was one of the highlights of our trip. Miguel was amazing. His home and gardens are amazing. It is completely hands on and a trip to the local market and into his farm. Don’t look any further. Book this.
From the moment we walked in, the atmosphere was incredibly welcoming and instantly brought all the participants together. The host was fantastic—so friendly, engaging, and passionate—and the supporting staff went out of their way to be helpful and kind. What I loved most was that we didn't just blindly follow a recipe. We actually learned the why behind the cooking, including how to make small adjustments to customize the dish to our own tastes or completely transform it into something new. It felt like a true community experience. I highly recommend this class to anyone!
This was a fantastic experience. Miguel is passionate about Oaxacan cooking. The setting is beautiful. We learned so much and had great fun along the way. Book it now!
Awesome time and experience.
My husband and I had such a good time with our son and his wife. The host was wonderful at explaining the various moles and traditional cooking methods. Each participant was involved in different aspects of the dishes we cooked and the food was tasty. The other couples were also fun to learn and chat with.
Had a very nice experience and enjoyed everything moment. We are still missing the recipes thought, would appreciate if they would still send them. If this is done, 5/5 rating!
My Sister and I had the pleasure of an incredible farm-to-table Oaxacan cooking experience with José as our instructor today. We were picked up in Oaxaca Central in a van and driven out to a smaller more laid back area outside of town where there was an outdoor cooking experience with José showing us the old traditional methods of making foods such as corn tortillas made from scratch, moles, salsas, empanadas and more.. We were given a tour of their large fruit and vegetable garden and their goats, chickens and such. Then we walked to the local market to shop for additional fresh ingredients. We arrived back and José put us to work, showing us the authentic cooking techniques over fire, using all the freshest ingredients. We enjoyed several dishes and it was a wonderful experience in a laid back large back yard setting. They have a great set up there for a truly memorable day. Oh, and we enjoyed the cocktails too!!
A wonderful experience! Learn how to make tortillas from corn masa. They showed us nine different Molay's and we got to pick two that we made from scratch.. Delicious.!
What a lovely surprise. This was a great cooking class, loved the setting, the short walk to the market, learning the processes of making some authentic food and getting to taste all the different moles.
We had an excellent time at this cooking class. It was such a unique experience learning the traditional way of making corn tortillas , learning about the different types of mole’s and being surrounded by the agriculture the food was made from. Beautiful scenery and staff, Jose was so lovely we really enjoyed our time ! And we were full the rest of the day!!
Excellent, fun and engaging.
We had a lovely experience, and a very fun & delicious day. First, we were really fortunate to have a great group of relative strangers. Our host was Jose' and we felt so lucky to have him - skilled, personable and with a great sense of humor. This was so much more than a cooking class. We discussed then tasted the recipe choices, then took a short walk into the village to purchase supplies. We made two different main dishes (two moles, in our case) plus empanadas, rolling out tortillas from scratch, a salsa learning experiment, and a dessert. Beer, water and mescal available. All in a lovely garden with an outdoor kitchen. Jose' made this a really fun day. My only suggestion would be that Quinta Brava (owner) supply some sort of rough recipe to take home with us.
Beautiful, hidden, huge garden setting hidden in a Oaxaca neighborhood. Everything is charming. The open air dining area, the kitchen, the cooking school area ... just beautiful. Our teacher was super nice. The quick walk to the market was perfect as it was a small manageable, local market. Everyone we encountered was friendly. The food we made was delicious! The nine moles we tasted before we started cooking were THE best! Very hospitable with beer, mezcal, chocolaté ... and food tastings all day. Definitely take this class .. you will love the experience! I do have two complaints: (1) I really wanted to absorb all of the history and details of Oaxacan cooking, which I missed, since the instruction was all in Spanish, even though the class was advertised as "in English"... i did finally ask the instructor if he spoke English and if he did, if he could use English ... showing him my ticket that said "English" class. He tried, but only for basic things. All the intricacies and and nuances of what he was teaching, were always in Spanish; & (2) we were told we would get recipes for all the nine moles and what we cooked from Jessica ... but Jessica never appeared, and we did not get the recipes. I loved the day and am very happy I went!
We booked a cooking class for 2 adults and our 3.5 year old daughter. We were the only people with a child there so initially we were worried she wouldn’t be able to participate but they made her feel so special and welcome. She was able to make her own tortillas, empanadas, and dessert. It’s a really beautiful outdoor setting and you get to socialise with other like minded travellers learning to cook a Oaxacan meal. It is a long day so if you’ve got little ones, bring extra snacks to hold them over as we were there from 9-3. We thoroughly enjoyed our day and would recommend this to anyone!
This cooking class was more about collective cooking and not really learning about each step in each dish. You vote as a group on what you want to cook so it might not be exactly what you want. We did make a lot of food - tortilla, empanada, soup, four salsas, adobo and mole. Started the day with a cheese quesadilla and chocolate/coffee and walked to the local market to source ingredients (we mainly stood around while they shopped). Enjoyed that we could have a beer or mezcal while cooking. The kitchen was beautiful and they are very aware of food safety practices.
Great location & experience. Can highly recommend this cooking class. The people were great and the food aswell. Also got to learn a lot about mexican cooking traditions
We had a great time and learned so much at this class. The facility and equipment were good. And we ate so much delicious food! There are many cooking classes to choose from, but this was an excellent choice.
We we’re taught by a gentle man named José. He was a natural teacher and had us all working at different stations after he demonstrated what he wanted us to do. We ground corn into dough using a metàte, The corn had been previously nixtalamized. We then learned to make our balls of dough into different shapes using different ingredients that we prepared. They were then put on the comal to cook. We then proceeded to make a mole using tomatoes, onions, garlic, prunes, capers, olives and herbs, We also made a delicious corn soup and a delicious fried banana desert. We learned the fascinating different ways to make salsa from hot to mild. The whole day was beautifully organised and very relaxing. I would describe this tour as over the top. Almost two wonderful to describe. Like a dream. Did I mention that we were in a gorgeous outdoor garden amongst 6 dogs and 5 cats. A wonderful woman named Vicki assisted. There was a lot going on!!!!
Fascinating techniques and a wonderful tour through his little farm and local market. A lovely relaxing and fun day.
Wonderful day cooking Oaxacan cuisine the traditional way. Small group, personal attention, everything delicious.
After reading so many positive reviews, I am sorry to say I was very disappointed by the Traditional Oaxaca Culinary Experience. It felt like we were off to a good start; Miguel began by questioning each of the eighteen participants about their interest in Oaxacan cooking and what they hoped to get out of the class. After each share, Miguel added his perspective, which in it's simplified form is that there is really no such thing as truly traditional cuisine in Oaxaca, which borrows heavily from other cultures and is open to improvisation and interpretation. Still, I would have preferred a more in-depth explanation of the evolution of Oaxaca ingredients and techniques since that was why I selected this course specifically. The first missed opportunity for some teaching occurred at the trip to the farmer's market. There, we were just given various fruits and vegetables to carry back to the kitchen with no explanations. I asked a few questions about items I was not familiar with, answered by our guide but it would have been preferable it our guide spoke enough English to tell the group what we were looking at. I didn't learn much more than I knew going into the experience. After returning from the market and an explanation of how masa is made, we divided into three groups to make tortillas. This is where another problem showed up; one of the groups was lead by a non-English speaker. As we made four recipes in these groups, the group with the non-speaker got demos but no explanation related to ingredients or technique. I don't know how Miguel's group was, but suspect maybe there was more relevant information shared. As I already have a lot of cooking experience, I would have liked MORE INFORMATION! You will cook a part of a dish, and not see how the other parts are done. There were tantalizing hints of information from Miguel which were never followed up on; which moles should be served with which proteins/ What are the various types of dried chiles and what are their uses? Short on actual teaching and explanations, which is what I as an experienced cook, come to a class like this for. It simultaneously felt rushed and not engaging enough to feel like essential information was being shared with the group. Beer and mezcal are freely available for the duration of the class, if that is your thing. If you are more interested in a culinary experience and less in education, you may enjoy this class more than I did. A couple things that we well done are the tasting of nine moles and their flavor profiles. However, not enough information given to recreate these at home. The staff is very competent and pulls everything together for the completed meal. The demonstration of the four essential cooking techniques used in Oaxacan cooking; boiling, frying, roasting and charring was instructive.
The day was a lovely experience, and it felt very relaxed which was nice. However, the final dish was quite disappointing, although we learnt how to make the sauces fresh, the meat was reheated from the day before so it wasn’t great.
Great experience! Very knowledgeable about ancient, colonial and modern food. My sister is a chief and she was totally impressed
What an incredible experience. A highlight of our trip. Excellent food, lots of fun, and a great day of learning. The whole thing lasted from 9am-3.30/4pm. They give you a small breakfast , so save room for all the deliciousness.
We were an international group of 8, all English speaking. It was a pretty little farm. We made tortillas , salsas, soup, moles and dessert under our chef’s excellent and informative guidance. We would not hesitate to repeat this class! Sign up!
This cooking experience is excellent - the hosts showed us their property and garden and then took us to the local market to gather ingredients for our meal. We started with coffee and quesadillas, and sampled 10 moles to then choose which two we would make together. We learned how to make tortillas from scratch, empanadas, molotes, a local soup, and two different moles. The chef is great and the food was delicious.
The class was amazing! We don’t typically do group things like this ever, but something about it changed our mind. And we are so happy it did. The entire group was just delightful. Chef was so fun and informative. We happily recommend to anyone who wants to learn about Oaxacan cuisine, the act of cooking it, history of ingredients; or if you just want to have a great time, lots of laughs, and maybe a few beers while you’re at it. It was an experience we very much treasure!
This was a really fun day! Jose was engaging with all of us and shared interesting insights about the food and cooking process. The food was excellent and each of us got to cook or make all the dishes.
This class was incredible. A friend recommended it to us, and it absolutely lived up to the hype. We made traditional corn tortillas from scratch, learned about the history and cooking process of mole, explored new flavors, and gained a real appreciation for the food, from the ground to the table. Even in a group of 15, the experience felt personal and tailored to everyone’s tastes. The setting was beautiful, and we loved getting to wander around the farm and visit the local market to gather ingredients for our dishes. Miguel, the owner, was an exceptional teacher, engaging, knowledgeable, and truly passionate which made the whole experience one of a kind. It added so much to our time in Oaxaca and was a true highlight of our Mexico trip!
We loved everything about this class! We were picked up from Oaxaca center and taken to a small farm with beautiful garden and outdoor kitchen. We met Jose there and started to plan the menu - we set the menu according to our wishes, while drinking hot chocolate or coffee and eating the first course of the day. Next stop was the market where Jose got all od the needed ingredients. Cooking was so much fun, we made 4 dishes and we got a chance to try 9 moles - which was pretty awesome! The atmosphere was great and Jose was a perfect teacher - he is such a warm and funny person, we loved cooking with him so much! For the money you pay you really get so much food, but even more important you get a perfect day in Oaxaca!
This was by far the BEST experience! Amazing from start to finish and well worth the money!!! I have told everyone how amazing it was…
We spent a lovely day cooking authentic Oaxaca dishes Our chef Jose was very friendly and knowledgeable and created an enjoyable informative class. We tasted 9 moles, made different salsas, made tortillas from scratch and cooked a full mole dinner and authentic soup. The staff at the garden were all helpful and kind. Would highly recommend. Jose even made us some beautiful tasty mescal cocktails.
We had a great time at this cooking class. It was one of our favourite things that we did on our 3 week trip to Mexico. Miguel and his team were amazing at guiding us through the class. Miguel not only has a great understanding of traditional Oaxacan cuisine, he had great knowledge of the history and origins of food around the world. We felt like we learnt at lot about Oaxacan food but also the history behind it. The property was also amazing spot to cook, relax and tour the farm. If you’re looking for a cooking tour we highly recommend this one. Thanks again team
Miguel and his friendly team will welcome you into their home and guide you through a personalized cooking experience based on what you want to learn! The cooking and eating all take place in Miguel’s outdoor kitchen and gorgeous gardens. So relaxing! The experience ends mid-afternoon unless you have time restraints and want to end earlier, which can be accommodated. But I would recommend planning to spend a leisurely day there!
It was an amazing experience. Hospitality was top notch, from the moment we were picked up. We learned to cook everything from scratch, and the food was great. Eat from the moment we got there, until the time we left. Miguel is a great teacher, he is very knowledgeable. He knows the history of the food and he is an excellent chemist. 😊
Wow.. just wow - the beautiful gardens and outdoor kitchen and the walk to the market were so special.. and what excellent hosts - very friendly, informative and easy to follow guidance on how to make moles, salsas, empanada's and they even made us some special mezcal mojitos. We really felt like this was an authentic, personalized experience were we got to know everyone and had fun, learned a lot and made some beautiful connections. Very inspiring - highly highly recommend, you will get so much more then a cooking experience!!
Chef Micheal was brilliant. So informative. Green oasis we walked into was a delight. Gorgeous friendly dogs. This tour exceeded our expectations.
Fed lots of great knowledge and great food! Miguel (owner) has a wealth of experience and knowledge, and a lot of passion. Cooking at his home/farm was a nice experience. Tasting 9 moles was a highlight. The class did feel a bit rushed at times and we didn't get to be as hands on with every part of the cooking/prep as I would've liked. Also I wish we'd made a more traditional mole. But overall a great class :)
I really enjoyed this cooking class but it was so much more than just a cooking class. We started our day off visiting their small farm on the property where they grow ingredients we used. We met Toto, their donkey. We also walked to a market near by to get the rest of the ingredients which was a great opportunity to practice our Spanish, and get a better feel for Oaxaca’s way of life, it had so much beautiful produce and ingredients that were new to me. The class itself was informative, including some food ways history and how they developed what is now considered traditional Oaxacan dishes, and we learned dishes that are pre colonization as well. Moles have always felt daunting to make and this class made them feel approachable… plus everything was really tasty. Lived this class!
If you’re looking for the best of the best, this is it. Everything is thoughtfully personalized to what you’re looking for, and Miguel shares the fascinating stories behind it all—absolutely captivating! The team was incredibly welcoming, the food was delicious, and the place felt like home with its garden, animals, flowers, and vegetable plants. I highly recommend this experience. Whether you’re a beginner or an expert, you’ll find exactly what you’re looking for and enjoy one of the most memorable experiences you can have in Oaxaca. Thank you to Miguel and the entire team! This cooking class was a relaxed and enjoyable day of learning and cooking together. It was truly a cultural experience, learning not just about the how to but the why and the history behind the traditional foods and methods.
