Family run operation where you meet the father and son who run this place. Elizabeth, our tour guide was very knowledgeable of the balsamic aging process and gave us great insight as to how it is produced and the certification process. The food tasting with the different balsamic vinegars was wonderful. I highly recommend this tour.

Itinerary
You will then see all the processing phases, from the pressing of the grapes, the wort boiling cooked inside the boiler, to the filtration and mixing. Continue until inside the acetaia where the vinegar begins its ageing step within the wooden barrels of different types of wood and different sizes. Here, vinegar has been ageing throughout 7 generations, and now you will see the historical vinegar factory, dating back to 1860.
You will also have the opportunity to taste the 'young' balsamic vinegars, produced for use on vegetables, salad and daily use, to more 'aged' vinegars, for use on meat and fish, to enhance the flavor of more refined dishes. Then we get to the tasting of the 'Extravecchi' (very old), that have been ageing from a minimum of 12 years up to the reserves of the family of over one hundred years of ageing.
You will have the opportunity to taste some typical dishes. At the end of the meal you will be offered Grasparossa Lambrusco, a wine produced on site. You may also purchase some products to take home.

Tour was authentic and very well presented with all the history and knowledge passed down for many generations of making balsamic!
A wonderful experience! The history of Modena Balsamic Vinegar is surprising and engaging, and the guide made it come to life for us. Meeting the family made it personal and fun - how many grapes to make a liter of basilico? We had booked the gourmet tour from Viator, quite a surprise and lovely food and hosts. This is a 10 out of ten tour!
Simply and incredible experience. Learning if the history, process and limitations of what DOP Balsamico is blew my mind. I love to cook, and have enjoyed many aged vinegars, but I had no idea of the complexity and passion that goes into DOP Balsamico. A great experience and Elisa was excellent guiding us through the history.
While it is a drive to get there (we took a train from Firenze to Modena and then a taxi, it was well worth the trip. Very interesting tour and yummy food and balsamic vinegar tasting! We learned a lot!
What a lovely family business to visit. The lady who gave us the information about the balsamic and their other products was amazing. Very informative, knowledgeable and generous with her time. She introduced us to other members of the family who were equally as nice. It was a lovely visit we were just sorry we did not have more time.
Immerse yourself in a session of learning about balsamic vinegar production, different certifications for authenticity, and then extend your tour to include the balsamic vinegar & food pairing to finish. Our friend’s father was close with the family which was how we decided that Modena was a must stop on our trip to Italy. For over 100 years, six generations have run this balsamic vinegar production. Even if you’re not a huge fan of balsamic vinegar, this family owned company will completely change your mind! Marcello, the owner and 6th generation, is incredibly accommodating and kind. Elisa ran our tour and she is so knowledgeable about the entire process and production! I cannot recommend this tour enough — absolutely opt to add on the food pairing after the tour and enjoy tasting history.
Easily one of the best things we did during our time in Italy. Elisa was a highly knowledgeable and engaging guide, and Marcelo made time to talk with us as well. The combination of culinary and family passion they put into their product and into your experience was terrific. The food tasting at the end really helped bring everything together, leaving us with a lot of new ideas on how to enjoy balsamico as an enhancement to a variety of dishes. I cannot recommend this particular tour highly enough.
The guide and the owners were very welcoming, and explained so much about the process that I feel like an expert on balsamic vinegar now! I highly recommend this tour if you are a cook, or just like to eat good food.
Passionate father and son team provided one of the best tours we've ever had. They spent time explaining the entire process of balsamic vinegar production, how to distinguish authentic DOP products, and shared their family tradition of a "batteria" of vinegar for each new family member. Their tasting presentation exceeded expectations-- delicious bread, mortadella, prosciutto, Parmigiano-Reggiano cheese all paired with their different balsamic products. This was memorable and very, very special.
This was the highlight of my Italy trip! So glad I picked this tour. Elisa was super friendly, informative and passionate about balsamic vinegar. Didn’t expect to meet two generations of the owners but they came to greet us too, really made us feel like vinegar making is so much more than just a family business for them. They truly love balsamic vinegars and want to share everything they know about vinegar making and tasting with their visitors. This was part of my birthday gift for my partner and we both had a wonderful time.
Great visit into a family-run balsamic vinegar winery. The staff (i. e., the family) is very enthusiastic about their history and their product.
Very personal introduction to balsamic vinegar process. Owner family involved in tour and gave us great history. Can’t wait to return next year when on-site B&B is completed. Also strongly recommend stopping for lunch at il Cappero alle Mura in Castelvetro.
Was a great tour, in a beautiful setting, and our tour guide was wonderful.. Learned a lot about balsamics and how they are made. And we were given a generous amount of food to sample the product with.
It was quite simply outstanding! Not to be missed. We met some of the family, heard history, learned how balsamic is made and wondered about the future of these small family farms. Really a step back in time. And if you’re lucky (We happened to be the only 3 people that AM) you might get to taste the over 125 year old balsamic! We bought an 80 year old bottle! This is truly a family operation and the guide was so knowledgeable. Enjoy!
Highly recommend this tour!! We learned so much and had incredible balsamic. The owners really made you feel like family while we enjoyed a wonderful tasting. We left extremely full and happy. I cannot say enough good things!!
Great experience, highly recommend! The tour and tasting were informative and a great value. Truly loved the experience.
very interesting and informative tour. We really enjoyed it and the area surrounding the farm is beautiful. The tour guide and owner were very kind and passionate and we learned a lot. We opted for the gourmet experience and the food and tastings were great. Highly recommended.
Elisa was very knowledgable about the balsamic and the family history of the owners. Paolo, Marcello and Elisa were very friendly and their products were excellent. The lunch provided was all local products and tasted amazing. It was very interesting pairing the different balsamic to the food, especially the dessert. Their wine was very nice but it didn’t overtake or spoil the taste of the balsamic.
Terrific experience. Met two members of the family and got to learn a lot about the process and history. Learned important facts about buying balsamic when at home. Our guide, Eliza , was FANTASTIC. Knew everything and was just a sweetheart. Loved every minute of the tour. Tasted 145 year old product. WOW!
The education and hospitality is excellent. They will explain how to tell the real thing from imposters. The gourmet tour samples how balsamic enhances food.
I think this was the tastiest tour I did while I was in Italy. I will start by saying that Paolo is beyond kind and went out of his way to make me feel welcomed. I happened to have the luck of being the only person that booked the tour at that time, so I had a private tasting and it was awesome. The acetaia was beautiful and you could immediately tell how much love and passion have been put into this estate over the past generations. This is a small family business and you won't taste this delicious balsamic vinegar anywhere else. They also served their own Lambrusco wine which was the best. I would totally do this tour again! Afterwards, Paolo even called me a taxi since I took public transportation out there and there wasn't a bus back for a few hours. This is the type of business you think of when you imagine one in the Italian countryside: small, family run and just beautiful in every way. You won't regret this tour or supporting this amazing family.
We booked this last minute and had the most wonderful time. It was so fun to learn the history of the family’s balsamic and get to try so many different ones! It was one of our favorite experiences in Italy it’s hard to even put into words how wonderful it was!
This is an amazing tour. We met our tour guide, Elisa, who was very friendly and knowledgeable. We also met the owner and his sons. The owner is the 5th (?) generation of owner / operators. They explained how traditional balsamic is made, and why most of the balsamic vinegar in the market is not authentic. They finished the tour by providing a tasting menu of their own wine, some local cured meats and cheeses, and how they pair with different types and ages of balsamic vinegar. A great experience, beautiful setting, and fabulous people.
We visited this place last minute after reading reviews. I have always purchased balsamic vinegar from Modena so it was great to see how it was made and where it came from. We didn't go on a detailed tour of the vineyard itself, it would have been nice to do so, but it was hot, so we saw the barrels and learned about the process and business. The tasting was also quite good. The price they quoted was less than what is promoted by third parties. However, there was no spread like the reviews mention here like cheeses, meats, dessert, etc. We had their wine and balsamic vinegar tasting, that was all, probably due to a last minute booking. We didn't mind, but we did come expecting the bells and whistles mentioned here! Overall, it was a very good tour and the highlight of our day. I highly recommend it.
What a great experience learning and trying the different aged balsamics. Marcello and Paolo's family history and story of over 160yrs was was truly amazing to hear. We got to try the 7yr, 8yr, 19yr, 25yr, 50yr to 130yr old balsamic with locally produced parmesan (12 and 36 month), Parma ham, mortadella and salami. Topped if off with some homemade dessert!! A truly unique experience here in modena!! Would like to thank the family picking and dropping us off at the train station!!
This was such a fantastic experience from the moment we arrived until we left. Both our guide, Elisa, and Marcello, the owner and operator, were extremely pleasant, knowledgeable, friendly, hospitable, and patient with all of our questions. The tour itself was great for somebody who enjoys food and likes to know about the ingredients they use. We learned a great deal about what makes a real balsamic vinegar and what to look for when we go back home. The end of the tour included an amazing tasting and a great spread of meats, cheeses, and some dessert items which were all delicious. We even got to eat some fresh cherries off the tree in the front yard. We would recommend this tour to anybody. A+
Elisa and Paolo were such incredible hosts. We enjoyed every moment of our visit - from the informative tour to the wonderful tasting. I can’t recommend this experience enough and can’t wait to go back again!
Very informative visit in beautiful location, with delicious food/drink and tastings. Located well out of Modena in the countryside, so needs a taxi there and back unless you have a car or maybe fancy cycling!
This is a wonderful place run by a beautiful family for 5 generations! They have Balsamic barrels from the 1800’s! Great tasting along with many foods to try with their products! We bought several bottles and plan to restock thru their website in the future!!
Absolutely fabulous experience. Elisa was super knowledgeable, enthusiastic and tons of personality. Marcelo’s family history and long tradition was very interesting. The tastings were absolutely delicious!! Definitely recommend this experience.
Excellent tour! Our guide, Elisa, was very knowledgeable and engaging. Her English was perfect and the tour itself is such a great experience. The tastings are delicious and plentiful. You’ll never look at Balsamic Vinegar the same way again!
This was a really great tour. The process of making this genuine balsamic vinegar was so interesting. This authentic product is not available outside of Italy. We got to sample the vinegar through different stages of aging, including one that was 165 years old. The tour ended with a delicious lunch. We were able to purchase the products there and I had some shipped home at a very reasonable rate. I highly recommend this tour.
This tour was amazing. You truly get to understand the process of balsamico production and gain an appreciation for the family.
Highly recommend this tour. The acetaia is beautiful. The family is warm and welcoming. Our guide was very knowledgeable. It was interesting to learn how the aging process affects the taste of the balsamic.
This is a do not miss experience!Everything from the lovely tour guide to the fascinating tour and amazing tastes were a delight
What a fantastic experience. We fell even more in love with Italy. Very good guide. We gained a deep respect for the process of basalmico
Absolutely lovely! The tour was just wonderful, such a beautiful location. It was everything we hope for in a balsamic tour, wonderful family, delicious food, informative. Exceeded our expectations!
Wonderful tour. Learned so much about balsamic vinegar. Beautiful location. Guide was fantastic and spoke excellent English. Meeting the owner wonderful experience. Highly recommend to everyone.
The Cavedoni family's vinegar production facility visit was the standout moment of our two-week Italian vacation. Our family of seven was warmly welcomed by Marcello, Paolo, and Elisa, who shared their seventh-generation legacy of crafting premium balsamic vinegar. Our daughters absolutely adored Paolo (the dad), who kept their taste buds happy throughout the gourmet visit. Elisa taught us about Trebbiano and Lambrusco grapes, hand-harvested and pressed to create the must, cooked to concentrate flavors. This was followed by a tour of the barrel room, where we saw barrels dating back to 1860, used in a meticulous aging process involving oak, chestnut, and cherry woods, explaining the differences between DOP and IGP vinegars. Marcello shared with us stories and explained about the fascinating family history and all the health benefits of real Balsamic Vinegar. The tasting was exceptional, sampling vinegars from youngest to oldest, alongside their pure Lambrusco Grasparossa di Castlevetro DOP wine, produced in limited quantities. Local pairings like Parmigiano-Reggiano and prosciutto elevated the experience, leaving our taste buds delighted. Their passion and hospitality, especially the time taken to educate us, made it deeply personal. We are eager to return for another visit.
Travelled to Bologna for a quick trip and spent our first day in the countryside near Modena. A great way to spend an afternoon learning about the family history and the process of making balsamic. Tasting the products - balsamic, vinegars, and wines all made by the family - was delicious, and gaining understanding of the process of creating balsamic was delightful. Sitting down to a board of local foods was a lovely end to a fantastic afternoon. Would highly recommend this tour.
What a wonderful experience. This acetaia is a gem and a once in a life time experience. The family, the passion and the history is absolutely beautiful. Highly recommended!
I was the only one on my particular tour. It was such a special experience and I will surely return with my family to share this magical experience with them. I learned so much about the history, production, and craft of making Accetto di Balsamico and had the most wonderful and insightful tasting experience. I've never experienced anything like it. Cannot recommend this tour highly enough.
We had some trouble getting there with the buses. Marcello was kind enough to pick us up from Castelvetro! The tour with Eliza was lovely! Very informative, warm and welcoming people and the tasting exceeded our expectations. Grazie mille Marcello & Eliza! Bravo!
What a wonderful tour. Had an informative and casual experience. Learned a lot. The products are amazing. Made several purchases. Decided to have them shipped so I wouldn't worry about damage, theft or loss (shipments are insured).
Such a wonderful tour! The Cavedoni property is beautiful, the family and guide were generous and lovely, the tour was fascinating, the tasting was outstanding and the two other couples in our group were very nice. We highly recommend this tour!
Marcello and Eliza were so personable and generous and the tour was so interesting! And the food was abundant and we got to taste the 160 year old balsamic!
We had a fabulous visit -- so informative and we'll never buy balsamic at home without using the lessons learned! We loved the balsamic tasting and pairing with food. We felt like we had been invited into the family's home -- Good food, wine and fellowship! Highly recommend --- many thanks!!
We loved every aspect of the tour. Learning about the process and tasting the different aged balsamic was such a treat. The food and wine was delicious! Who knew ricotta with balsamic drizzled over would be Devine!
Our tour was everything we wanted! Learning about making balsamic vinegar--the heart, time, and dedication it takes--was so fun! Not to mention all of the snacks, wine, and balsamic vinegar we were able to enjoy as well. Grazie mille Marcello for sharing Acetaia Cavedoni with us--what an incredible experience.
