Itinerary
This hands-on workshop takes place in Kyoto, a city deeply connected to Japanese food culture and traditional craftsmanship. The experience focuses on the final finishing stages of a Japanese kitchen knife, using a professionally prepared blade. Rather than involving dangerous forging processes, the workshop introduces safe and approachable steps that allow participants to understand how a knife is brought to completion. During the session, you will work on fitting the handle, refining the finish, and learning how balance and grip influence comfort and everyday use. Each step is explained clearly, and guidance is provided throughout, making the experience accessible even for first-time participants with no prior knowledge of knives or tools. The workshop is conducted in a calm and welcoming environment, with time to ask questions, observe details up close, and take photos during the process. The pace is relaxed, allowing participants to focus on the craftsmanship and enjoy the hands-on experience without pressure. At the end of the workshop, you will take home a finished Japanese kitchen knife shaped by your own hands!

Had a fantastic, informative experience here learning how to sharpen a knife the Japanese way. Started with a rough blade and end up with a razor sharp, engraved knife. Lucas was chatty and super helpful. The location has recently moved so be sure to check with the operator! The knife sharpening specifically is above the curry house called 'Spice Holic', about 5 minutes west of the main location. In any case a must do if you're in Kyoto.
This was a lovely experience that was sufficiently challenging but thoroughly achievable. Would recommend this as a great value for money experience
The class was fun and engaging! Jenny was helpful and super friendly, and Sensei Luc showed tremendous experience and gave amazing advice! Would totally recommend this class if you wish to take home a piece of Japan!
Instructor was very nice. She explained the steps and helped us along in the process. With the 4 of us, it took about 1.5 hours. The free saucer is small, but you have the option to upgrade to a larger saucer or bowl at a cost. Both the free and the upgrades are adorable. At the end they made sure to take a photo of the group and packed our porcelain so it was safe to go.
Very fun time. Betty was great!
Sunday was a great host, and he guided us through the knife making very well. I had a fantastic time! Worth the money too 😁
Amazing experience to have a personnal knife ! Sunday perfect !
I really enjoyed my course ! The guide Luc put me at ease and was very enthousiast in sharing the learnings. I can now say that I know how to sharpen a blade ! And on top of that I left with a beautiful and sharpened knife. I recommand th experience a 100%. 🔥
5 stars! Luke is the man. Great guide and an awesome knife for the cutting
Had a fun time learning how to sharpen a useful kitchen knife. I was amazed that it cut paper so easily when I had finished and the bonus is I got to keep it. Lucas our trainer was excellent and informative.
Would not recommend. TLDR: Literally the entire class was, swipe a knife on a whetstone for 15 minutes, thanks for your $130 goodbye. Booked our trip through TripAdvisor, followed the meetup address walking through the rain to get yo the building only to be told the workshop moved 7 minutes away months ago and “we should have gotten an email” that never came (we booked this morning, so listed address is out of date.) The “workshop” was my wife and I stuffed in the back corner of an actual workshop where people were making ceramics, in an extremely noisy setting. Our guide was friendly but quiet and gave almost zero instructions other than to sharpen the knives, and to keep sharpening when my wife’s wasn’t sharp enough. Then, when offered to test the sharpness, he grabbed a piece of the newspaper laying on a table from another project and let us “cut” the newspaper which just tore, because its newspaper. This felt like getting a charged $130 to do someone’s chores. I feel like our experience was not in any way the experience we read about in other reviews. Avoid.
Fantastic hands on guidance by patient native English speaker. Would definitely recommend!
Very fun, great instructor, had a blast would come again!
Fun experience to learn a new skill. Plenty of time was given to us with a patient instructor that knew what he was talking about. We had a calm atmosphere with music playing in the background. Overall great time for the price.

Very nice workshop where you get to sharpen your own knife. You get to choose between a western style chef knife of the traditional Japanese one (slight surcharge). Optional engraving on the handle. The guide spoke perfect English and was very friendly. The workshop was private and only on reservation
Victoria was very helpful and knowledgeable. This experience involved sharpening the knife and then attaching the handle. A perfect souvenir from Japan!
10/10 recommend the knife making class, can’t wait to take my knife home and use it everyday! Luke is extremely knowledgeable and super friendly, Request him if you can!!!
I really enjoyed doing my knife. Luke was engaging, fun and taught how to properly do my knife. I would highly recommend it to anyone and the best part is that I got my own personal knife.
Was a great overall experience! Learned a lot about knife sharpening and how to maintain knife care at home!
Fantastic activity to do on a wet day in Kyoto. If you have been to temples, shrines and castles this is a fun activity to share together and we learnt a new skill. Sunday guided through the art of knife sharpening so hopefully we will be able to repeat this at home.
My friend and I had the whole session with Sunday, learning how to sharpen and take care of knives. With an added touch, we had our knives engraved to commemorate our trip yo Kyoto. Highly recommend checking it out if you're interested in purchasing Japanese knives and taking care of them.
