Itinerary
Pick you up from your accommodation in Florence at 7am. Our driver will normally be at your address at 6.45am. We will then drive to the caseificio, it will take approximately 1 hour and 45 minutes.
At this caseificio (cheese factory) you will be introduced to the universe of parmesan cheese and get to know its secrets. Behind every roll of Parmigiano Reggiano is more than meets the eye, due to the intricate traditional recipe behind and the controlled conditions of the entire process. You will watch cheese makers at work and witness the entire process. The tour of the factory will eventually lead to the aging room (‘stagionatura’ in Italian), where you will admire rows and columns of cheese wheels perfuming the air. The factory produces more types of cheese, all organic. The caseificio tour will end with a tasting of different types of Parmesan Cheese and ricotta accompanied by local products.
Today Acetaia Sereni is a leader in the production of traditional balsamic vinegar of Modena and a vast range of sweet and sour condiments. Here you will have a traditional lunch at the property's restaurant that is overlooking a breathtaking scenery. Lunch is centered around dishes typical of the Emilia-Romagna region that are best paired with different types of balsamic vinegar. Afterwards, you will have a private tour of the cellars, receiving a full explanation of the balsamic vinegar’s manufacturing process: from the pressing of the grapes and the wort boiling, to the filtration and mixing steps. The visit will end with a balsamic vinegar tasting.
Prosciuttificio Leonardi was born in 1988 from a vast experience in in the pork slaughtering and processing sector. 1988 is also the year in which the company joins Modena's ”D.O.P.” Prosciutto Consortium, which makes all their products labeled according to the PDO (Protected Designation of Origin) EU product quality scheme. This factory prides itself with upholding high production biological standards and producing exquisite dry-cured hams. It is a reliable supplier for Gucci restaurant in Florence and Massimo Bottura's top class restaurants. You will tour the factory, visit the production rooms, and understand how ham processing works, from the receipt of the meat to the final product. Your visit will finish off with the tasting of a wide range of their products: hams both raw and cooked, such as culatta, lardo, salami, prosciutto cotto, prosciutto al tartufo. The cold-cuts will be accompanied by crescentine, also known as tigelle, which is a typical bread of the area.
Fattoria Moretto is currently run by Fausto and Fabio, the third generation of the Altariva family. The winery's origins trace back to the early 1960s when their grandfather, Antonio Altariva, moved the family from Pavullo nel Frignano to the hills of Castelvetro to start a winemaking venture under a sharecropping contract. In 1995, Fausto decided to convert vineyard cultivation to the "integrated production" method, marking the first step towards organic farming. Today, Fattoria Moretto's production is focused on expressing the unique characteristics of the Lambrusco Grasparossa territory, emphasizing quality over quantity. In the heart of the territory of Lambrusco Grasparossa, about 200 meters above sea level, Fausto and Fabio Altariva feelingly cultivated their lands. The farm, completely run with organic methods, is extended into non-adjacent parcels on the hills of Castelvetro. The area has good ventilation which tempers the summer heat and protects plants from disease.
Your guide for the day will drop you back to where you were picked up. Guides can drop clients back to other locations with prior notice.

A once-in-a-lifetime experience! My mom and I had an amazing time exploring where so many of our favorite foods and wines are made. Every stop featured local, family-owned businesses, which made the tour feel authentic and special. It truly was an incredible day—we learned so much, enjoyed delicious tastings, and had meaningful, personable conversations with our wonderful guides, Elizabeth and Angel. Highly recommend this tour to anyone looking for a memorable and enriching experience!
From start to finish, angel was an absolute delight! He guided us and explained everything at every factory we explored. We didn’t have coffee before leaving for our tour, and he ended up stopping at a cafe for espresso for us. If you’re in Florence, do not skip out on this trip! Highly recommended to any one!!!’ Thank you angel!!!
THIS is the tour you want AND have to do!!! At first we were hesitant on choosing this tour given the cost. Then, after a well traveled friend reviewed the itinerary and said that it sounded great, we committed and hoped for the best. We were not disappointed. Angel was ready to pick us up right on schedule right from our hotel. Shortly after from pulling away from the hotel, Angel cordially introduced himself and we had a great introduction conversation. He then commenced to review the day's itinerary. There was a modification due to a vendor's request and he said that it would just switch a couple stops and not change the day's activities or timing. We appreciated the honesty and explanation. From the first stop to the last, we were amazed at the knowledge Angel had about the locations and products from all our stops. Even more appreciated was his smooth delivery and willingness to answer questions. It was no surprise that he had a great relationship with the staff of every establishment. As said above, this tour is not to be passed by. You will not regret it. Just sit back, relax and get immersed in this fabulous experience.
What a great food experience! Our driver, Stefano was fantastic, very knowledgeable and friendly. What an experience the day was- learning about parmigiana cheese, prosciutto, and balsamic vinegar and of course a wine tasting along the way. It’s the ultimate food experience and highly recommend this tour.
This was such an amazing experience! Our guide Elizabeth was awesome and made us feel comfortable right away. It was also a lovely detour to see the countryside after days of city jetsetting. We felt like VIPs all day! Come with empty stomachs and lots of energy as it will be a full day of amazing food, wine, and views to rival all of Florence.
My parents, husband and I on our recent trip to Italy did the Exclusive Emilia-Romagna, Parmigiano-Reggiano, Prosciutto, Balsamic Vinegar Tour with Angel and had the most amazing time! He was very engaging, knowledgeable and entertaining throughout our full day with him. Angel had tons of great advice for things to do around Florence during our trip. We all felt like we learned a lot and had a blast seeing how all the things were made. It was one of our favorite things we did on our trip! Highly highly recommend!! We will definitely be sure to book another tour with Angel when we return to Florence!
What an amazing day!! Stefano took us to the most exclusive, best places! All of our visits (cheese factory, prosciutto factory, Lambrusco winery, and balsamic vinegar house) was top notch, some of the best I’ve been to! Our guide was warm, kind, and very knowledge about the region and its many wonderful products. Would highly recommend this tour for foodies!!
Our guide Angel was top drawer in every way. He served as driver and the actual guide on a couple of stops. We learned alot about Parmesan, balsamic and parma hams. The tastings were delicious and brought each visit together. Never boring. Great tour for foodies.
What a fun day! Daria was our guide. Can't Say enough good things about her. It was fun to watch her be so excited by her job. All the tours were really educational and fun. The balsamic was probably the highlight for me. And top it all of with an amazing lunch.
What an incredible experience! We were looking forward to this tour for months, but we had no idea how amazing it would be. Our guide, Johnny, picked us up right on time from our hotel and was a fantastic well of knowledge, answering the many questions we had from our time in Italy. Incredibly knowledgeable and a great conversationalist, he made the long (and scenic!) car ride fly by. Each stop was so delicious, from the cheeses to the vinegars to the full meal of pasta and meats. We were glad we could purchase items throughout the tour, and grateful to see the countryside and smaller towns outside of Florence. The highlight of our week in Italy! Thanks Johnny!
Excellent day trip from Florence if you are keen to learn about the process of making parmigiano, prosciutto and balsamic vinegar with an beautiful setting for lunch to finish off the day!
Wow! What a day. Paola was sensational! This was the most memorable day of our trip to Italy for sure. To see the cheese literally being made was fantastic. The same can be said for the ham and prosciutto. I've never tasted mortadella that didn't just taste like bologna, until now, Gary's was exceptional. The real highlight for us was the balsamic production which is truly fascinating! My wife and I have a new understanding and appreciation for the authentic balsamic making traditions we will never forget. I highly recommend this tour. Also, we asked Paola for recommendations on where to purchase wins and gold jewelry without getting tourist treatment (and costs) and she delivered remarkably well. Paola, thank you so much from Mary and Nick!
Paola, our driver for the day was fantastic. Loved her. Also the people at the balsamic vinegar venue were wonderful & so accommodating to please. Lunch was exceptional . My husband loved the meats!
Had an amazing day of touring and tasting. Beautiful views throughout and a delicious lunch. Our guide Daria was very kind and knowledgeable. Would definitely recommend!
We had a magical day with Paola! From start to finish, we were taken care of. Each stop gave us an insight into how the products are produced, and we were able to meet the people behind the process. One tiny suggestion: after sampling the prosciutto, ricotta, Parmesan, and balsimico, there was actually no need for a four course lunch! I would have preferred a bit of gelato to finish the day after all the tastings.
Just learned so much about Parmigiano, Prosciutto and Balsamic Vinegar. Paula was a great guide. So full of knowledge and do helpful and a great driver.
Of all the tours we took while visit Florence for our honeymoon this was 100% the best. Most people do wine tours which are great but this is a very unique experience when visiting Tuscany. Our guide, Paola, was extremely knowledgeable and gave us lots of insight into the making of Parmesan, balsamic and prosciutto. We were picked up right in front of our hotel and drove to each location with our guide. This is a very small tour and we only saw two other people who also had their own guide / driver. First stop was the Parmesan factory where we got to see the process of making Parmesan then had a tasting of 3 different aged parmesan to start. Then we went to a prosciutto factor and walked through the entire factory to get a first look at the operations. Then, we went upstairs and had a variety of cold cuts and wine which was quite filling. Last but not least we went to the balsamic factory to learn about the steps of producing balsamic. We walked through the entire factory and got to see each step to age the balsamic. Then after the factory tour we went upstairs to their new tasting room and got to taste at least 5 different balsamic a Then after the balsamic tasting we went up the hill to the insight restaurant and had an amazing lunch where they had balsamic on all of the dishes. Overall, this was my favorite tour in Florence and was a small group with great amounts of food and wine yo enjoy. I would 100% suggest this tour when you are in Florence. If you are looking for a unique small group experience when visiting Florence you will not be disappointed!
Another great day traveling with Enotopea Wine Tours! We learned about Parmesan, Prosciutto and Modena Balsamic! The day was perfect and Angel is a wonderful guide!!
What a wonderful experience exploring Emilia-Romagna! Paola, our guide was so amazing and made our tours interesting and fun! We saw, we tasted and tasted some more, so skip breakfast and enjoy the gastronomic ride. Paola was a great driver and host and is so knowledgeable. It’s hard to pick but the balsamic tour and tasting was probably my favorite experience along with sharing the day with my husband.
The tour and information provided by the balsamic factory was fantastic. Our guide was late to collect us. She was not able to answer any questions about the cheese factory and nothing of any depth fir the surrounding areas appropriate to the factories we were visiting.
My guide was Daria and we had such a lovely and fun day! My favorite stop by far was the balsamic vinegar factory! It was beautiful and they had a gluten free lunch for me! Best balsamic of my life!!! The day was soooo perfect, I would highly recommend!
Fabian was a great guide, extremely knowledgeable, polite, friendly and he made the whole day trip memorable and fun! Acetaia Sereni provided an amazing experience!
Angel was our guide and he was excellent. As the title says it was fun, informative and interesting. Learned a lot especially from the farm where they make the incredible balsamic. The meal was delicious and the experience overall was fantastic. We’d highly recommend this tour for those interested in these Italian specialities.
The personal/individual treatment during this tour really enhance the experience. Paula was our guide. She was fantastic, here knowledge and consideration towards our interests made the entire day fun. The Parmigiana, Prosciutto and Balsamic Vinegar tours were very well orchestrated. The knowledge shared was more in-depth than we anticipated. The food, WOW! Every tour ended with samples that were amazing. With everything included in this package, you can say you are getting value for money. Highly recommended!!!!!
We did a private tour, just myself, husband, and tour guide. It was fantastic! We learned so much about Italy and the generations of families who manage farms and vineyards to produce the most amazing balsamic vinegar, parmesan cheese and prosciutto. We started this day-long tour from Florence. Be prepared for a lot of driving, and possible traffic! Besides that, I highly recommend this tour for any foodie!
We highly recommend Enotropea tours. We had an amazing two days with Angel. He brought us to the factory tours and the second day to multiple cities we wanted to see. Angel is very reliable, knowledgable, and fun to tour with. He was so relaxed and patient while we took pictures and enjoyed all the sites. We enjoyed are time so much with Angel and in Italy. I would have no doubt if you book with Enotropea you will be taken care of and the tours are excellent.

Angel was an amazing guide. He was on schedule, and very personable. His attention to detail is superb and his knowledge of the products is impeccable. We thoroughly enjoyed the entire day!
Pauola gave a wonderful tour of the cheese plant then guided through other tastings and plant tours throughout the day. She made the day special by allowing us to go at our own pace while giving us a great amount of information and friendly tidbits about the area. It was a wonderful day in the country seeing how locals live and work along with the fabulous products they make!
Our guide made the trip! Angel was excellent!!! We already miss him! Very professional and took special care of us
This tour was not only one of the highlights of my Italy trip, but it was also an experience and lunch I will never forget. belén was an expert guide and was warm and welcoming. We opted for the Lambrusco visit over the prosciutto as we are veg, and it was so fun! The cheese factory was fascinating and the tastings were delicious and plentiful. The absolute highlight was the balsamic tour, tasting, and lunch. That was truly an experience I will not forget and one of the best meals of my life- you have never tasted balsamic like this before! If you are on the fence, I can assure you it is well worth the money. I cannot wait to return to Modena! Truly a bucket list day.
This was by far the best tour my wife and I have ever been on. We loved the schedule of the tour and our guide, "Bella", was awesome. Bella was kind, knowledgeable and explained things to us prior, during and after each tour (stop). This was a great private tour and we will definitely use this tour company (Enotropea Tours) again!!!
The whole day was wonderful. We visited a family Reggiano cheese factory- from the cow to the cheese to tasting. From there we drove to a family owned balsamic vinegar business. We learned so much, we had a tasting time and then a lunch on a terrace over looking hills of Tuscany. The final stop of the day was a family owned Prosciutto business. Amazing!
Our tour with Angel was a true highlight of our Italy trip. He is genuinely a cut above the rest! The establishments where he took us were clearly at the top of their industries, and provided us with fascinating, well-narrated tours, and incredible tastings. During the drive, Angel was a font of knowledge about every aspect of the region and its history. He even scouted out our next days' destinations for us in advance, and relayed back information that saved our trip. We would have booked him every day of our stay, if we could have.
Angel was so kind and gracious! He is knowledgeable kind and took wonderful care of me and my mother who is in her 80s. The places we visited were exceptional. And I cannot wait to travel again with Angel as our guide!
I don’t know if there are words enough to describe how amazing this tour was. Our guide Angel lived up to his name and provided probably the best tour that we have ever been on. We were able to taste a bit of everything including the best ricotta I have ever had. I only wish that I was able to take some home. The employees/owners of each of the locations where so kind and welcoming. The lunch provided at the acetaia was delicious with a perfect view. Spend the money for this tour, you won’t regret it.
Our family loves to cook, so this day in Modena and Emilia–Romagna countryside was a mecca of sorts. Our guide, Fabian, was well informed and never rushed the day. Lunch at the secret restaurant was fabulous. It was fascinating to see the pride and passion that goes into making these treasures from Italy. The acetaia was beautiful and the drive through the countryside calming.
