I am 2nd generation Italian and a foodie. I love to eat and cook. I was so excited to learn how to make pasta like my grandmother used to make. . But this was not authentic pasta but a gluten free pasta class. NOWHERE in the description did it mention we would make gluten free pasta. Immediately I told the chef there was a mistake and we must be in the wrong class. The chef looked at our ticket and said it’s not an error and it wasn’t a big deal because when I got home I could look up the original recipe. Basically he changed the class because there were some people who were gluten free. I wanted to leave but My husband told me to just go with it and drink the free wine. The wine helped. We made the dough which consisted of eggs, corn meal, rice flour, zantham gum, and turmeric. Turmeric helps to make the color of the dough look like it was made with semolina flour. None of these ingredients would have been found in Nona’s kitchen. When we finished making the pasta, the chef cooked our pasta and served it in something he called s ragu- but it was actually a watery miso type soup. At the end of the event all we had was basically play-doh in bowl of dish water. My heart goes out to those who have gluten intolerance. But this establishment needs to clearly label this class as gluten free. The free wine gives this 3 stars.

Itinerary
Step into an authentic, hands-on culinary experience where you’ll learn to make three classic Italian pastas — ravioli, tortellini, and pappardelle — entirely from scratch, just as our nonna (grandmother) did for generations. The class is guided by a passionate Italian cook and set in a charming, rustic kitchen that smells of fresh flour, herbs, and rich tomato sauce. Throughout the experience, guests will sip on unlimited Tuscan wine, selected from regional vineyards to complement every bite and moment. Mix, knead, and roll your own fresh pasta dough by hand. Cut and shape wide, rustic pappardelle using traditional techniques. Fill and seal delicate ravioli, packed with a rich ricotta-spinach or meat filling. Learn to twist tortellini into perfect rings, just like Emilia-Romagna's old traditions. Enjoy small bites and Tuscan wine throughout the class, keeping the atmosphere relaxed and joyful. Sit down at the end of the class to enjoy your handmade creations with others, like a true Italian family meal.

Great afternoon of pasta making Lovely group and Ricardo was a great teacher 3 types of pasta and good instructions Only red wine though Could do with offering rose and white Plenty of it though and water
Amazing experience! You would never know it’s gluten free!! Learned a lot, ate a lot and drank a lot!
This was a great local cooking class. Roberto did a great job explaining everything and made it a really fun and fast moving class. The food was delicious, and we all really enjoyed the class.
What a great way to spend Valentine’s Day! Our family, and a lovely mother/daughter combo, spent the late morning making 3 different types of pasta with Roberto. The class was paced perfectly, and would work for beginners or people with some previous skill. Everything was delicious, especially the butter/sage sauce. We’re not even gluten-free (we are vegetarian, though, which was easily accommodated), and it was wonderful. Roberto is meant to be teaching classes like these. Easy 5/5 stars.
Amazing experience, food was delicious. Roberto was an excellent teacher and he is hilarious. Would go again.
Amazing lesson and very patient and funny chef!! We were a small group of 4 so it was perfect for the experience.
We had so much fun! Roberto was extremely personable and informative. We did not realize it was a gluten free pasta class when booking but Roberto assured us the end result would be great and he was right. We all agreed that it tasted nothing like the gluten free pasta we have tried in the past.
At a restaurant in the basement where its private and you had everything you need. The chef was knowledgeable and made the class lots of fun
First time in Italy on a girls trip! We took a day trip to Florence and this was the highlight of our trip! Roberto, the instructor was very entertaining, his confidence and knowledge was magnetic. This class was not a crazy party vibe or anything, it was chill. The class made you feel like you were cooking dinner at a friend’s place. It felt intimate and comfortable. We had 5 people total in our class so it wasn’t overwhelming. Roberto was able to assist everyone making their own pasta. The pasta we made tasted better than a lot of the restaurants we tried in Italy. We took the gluten free version and none of us are gluten free. You couldn’t tell a difference! It was amazing! 10/10 experience, definitely recommend.
Roberto was a great instructor and a lot of fun to spend 3+ hours with. We learned how to make 3 types of pasta with the skills and knowledge to take home. Roberto is also a Florence tour guide and shared a lot of valuable information. Excellent option for gluten free but either way the food is as out of this world, thank you! Amazing wine as well and atmosphere to learn a lot!
Roberto was great. Very informative and made the class fun. I learned a lot and met some great people.
There were several activities cancelled due to strikes so this was a last minute find. Probably the most fun experience we did in Florence. Roberto was a great teacher and the food was delicious!
Roberto was entertaining and made the class a lot of fun. Food prepared was one of the best meals we had in Florence.
Fantastic tour. Such a great experience. Everything was amazing. Roberto took great care of everything. It’s a must. 😊
Fun way to spend a few hours away from sightseeing. Communication was good when restaurant location changed, We enjoyed the hands-on techniques for two pastas (pappardelle and ravioli). Sauce was made by the chefs in the kitchen. Tirimisu was demonstrated by instructor but each student had a chance to stir. Nice time!
Best thing we've done in Italy. We learned a lot and made good friends. I highly recommend!!!!
