A fabulous way to spend a rainy afternoon. I learned a lot about mozzarella cheese and stratchiatella. Vanessa was amazing. It was also fabulous to sample the wines and cheeses for a late lunch afterwards. I have taken my Cheese with me and will share with my friends this evening. Loads of fun and highly recommended.

Itinerary
Meet your chef right in front of our rustic-chic location in the city center where the vibes are organic, the ingredients are top-notch and the mozzarella flows like wine. Speaking of wine, you’ll start this adventure with a cold glass of Prosecco, because every masterpiece (cheese or otherwise) deserves a sparkling kickoff. Then, it’s showtime. Led by an expert cheese maker, you’ll learn how to transform fresh curds into perfect little bocconcini, twist up some nodini, braid treccine and dive into making burrata and the ultra-luxurious stracciatella (spoiler: you’re going to want to lick the bowl). Expect creative pairings like stracciatella with bottarga and lemon zest, plus a few secrets from the Simbiosi kitchen that you’ll absolutely be bragging about later. To top it all off? A guided wine tasting featuring both organic and conventional wines lets you sip, swirl and debate your favourite while soaking in the delicious chaos you just created. There will be laughter, music, mozzarella, wine, more mozzarella and possibly cheese-induced euphoria. Whether you’re a die-hard cheese lover, a wine enthusiast or just here for the chaos and carbs, this is your moment.

This class is awesome. Jessica, the instructor took her time to make sure everyone was getting it right before going on. She's very knowledgeable about cheese making and it was a lot of fun to all make a batch of cheese together. She also sent us a very detailed cookbook so you can try making mozzarella at home. At the end of the class, they fed us a pizza with the cheese we just made. The food they served after the class was off the chart good. Thank you Jessica for a great time. Mark & Frannie Pompeii
Amazing class! Jess does an incredible job explaining and makes the whole process very beginner friendly, informative, and fun.
My husband and I were traveling with another couple and the four of us took this class. There were only six of us in the class so it felt semi private. None of us had any knowledge or experience with cheese making, but Jess made the class very fun and informative. It was great to be so hands on and to be able to keep your creations separate and take it all home after. The amounts were very generous! I only wish we did this earlier in our trip so we had time to eat it all before we moved to another destination. Make sure to come hungry because once you’re done making the cheese you get to eat the instructors portion along with a bunch of other stuff including a diced truffle spread, cured meats, bread, Stracciatella and caprese. And the drinks kept flowing too! We didn’t have room for lunch after. This was definitely a highlight of our trip!
We learned some great techniques and watchouts for making Mozarella. Jessica was very knowledgeable and made the class fun. We also received a great lunch. We recommend this event
Learned a lot. Great class. Delicious food and wine afterwards
This was so much fun. Jess the instructor was great, as were the other participants. If you have any hesitations, just book it.
This was so much and delicious too! Our instructor Jess was fantastic!!!
Jes was our host and she walked us through the whole mozzarella making process. She was informative and fun! The wine was plentiful as well so it ended up being a lovely afternoon and lunch. I'd highly recommend it to anyone visiting Florence. At the end, we got to take all of the mozzarella we made and enjoyed it with fresh tomatoes and basil for the rest of the trip. If possible, book this experience at the beginning of your visit so you can savor all of your hard work for the rest of your stay.
The whole process was excellent. From booking to cheese making to dinner afterwards, everything was pleasant, efficient and enjoyable. Our instructor was knowledgeable, friendly and supportive. We were a family of four that included two teenagers. Everyone made them feel welcome and accomplished. The food and beverages were fantastic! We all enjoyed our experience very much!
We loved this class. Was easy for everyone to follow along and fun to learn about mozzarella making. Few in our group were Gluten Free and this location provides food and snacks for those with gluten intolerance.
It was such a fun! If you have never tried it, you MUST! We were guided perfectly, every detail and every step were explained so clearly that we didn’t have a single doubt we could make it. Moreover the mozzarella we’ve made was actually good and tasty. After the cooking glass we had a very rich aperitivo tasting local wines and the mozzarella we’ve just made. I highly recommend for everyone who comes to visit Florence!
The instructor was excellent and very friendly. We e joyed making cheese and sat down to a delicious lunch. I would highly recommend this class.
We were thrilled to discover a hands-on mozzarella-making class right in the heart of Florence, and it absolutely lived up to every expectation. From the moment we arrived, the experience was both educational and genuinely fun — a wonderful combination that isn't always easy to find. The highlight, of course, was the mozzarella filata — we got fully hands-on, learning the traditional art of stretching and shaping the curd ourselves. There's something incredibly satisfying about pulling your own fresh mozzarella, and the instructor made the whole process approachable and engaging. Best of all, we got to take our homemade creations home to enjoy later! While we waited and worked, we were treated to an outstanding spread: authentic wood-fired pizza, creamy stracciatella, a generous selection of Italian cured meats, and excellent wine of course, paired with mozzarella. Everything was fresh, flavorful, and so authentically Italian. This experience was the perfect way to close out our April trip to Italy. If you're visiting Florence and love food, culture, and great company — don't miss this class. It's a memory you'll carry home right alongside your mozzarella.
We loved making cheese with Jess! It was so interesting to learn the process, and try to replicate the knots and braids. Lunch was also fantastic! This was so much more of a unique experience than making pasta or pizza. Highly recommend!!
Such a wonderful experience for my fiancé and I! Jess was very friendly, informative, and so very patient.
We had a fantastic evening learning hands on the art of making mozzarella from Jess. Afterwards we were treated to a delicious meal with the different forms of cheese we had created. 100% recommend!
The whole experience was excellent. The restaurant atmosphere was fantastic. Our guide and teacher in the class was very well prepared, very friendly, and brought forth the local culture and cooking practices of Florence. I would highly recommend it.
Incrediable experaince, my husband and I loved it! We had a lot of laughs and most of all so much food to eat!
Jessica, our instructor made this cheese making class so much fun and easy to follow! She is absolutely charming and we have made a new lifelong friend.
Such a wonderful and fun experience. Jess was fantastic and the dinner at the end of the class was delicious!
Absolutely amazing! It was so much fun and the hospitality was heartfelt. And delicious! Extremely well done! Thank-you.
Our family of three attended this cheese-making experience on our last day, and it was such a special way to end our trip! It takes place in a farm-to-table restaurant, which made the whole experience feel even more authentic and welcoming. If I could offer one tip, I’d recommend booking it earlier in your trip so you can fully enjoy the fresh cheese you make, we wished we had more time to savor it! After the hands-on cheese-making, we were treated to a delicious spread of charcuterie along with eggplant, artichoke, burrata, stracciatella and zucchini, plus fresh flatbread and pizza. Everything was delicious We did get to taste our cheese the next morning before we left, and it was wonderful, such a fun (and tasty!) memory to take with us. Highly recommend for families or anyone looking for a memorable, delicious experience!
I participated to this mozzarella class with my family and we had the best time in Florence! The class is really cool, interesting and funny at the same time. The food is amazing and at the end of the class you will be able to make your own mozzarella. Jess, the teacher, is fantastic, very knowledgeable and sweet at the same time! If you are in Florence, you need to try this experience!
It was amazing! Jess was our instructor. She made everything easy to understand, she would always come around the table to double check we were doing it right. Also after we made the mozzarella she sat down with us as we ate and answered any question we had. Even questions apart from the class. We had so much fun and we will definitely be making it at home!
We had a wonderful time at the mozzarella class. Jess was a wonderful teacher. She is easy to talk to and willing to answer all questions you may have. You get to take your mozzarella and use it in your own way! The little lunch you get was delicious and the wine tasting made it even better! Would highly recommend this class if you have some time in Florence!
I was so excited my class didn't get canceled!! It was low season during my trip and other tours didn't fill up! I was just off a long flight and exhausted -- but soooo happy I took this class. Had no idea making mozzarella was "easy" but complicated at the same time - and fresh is SO much better! After expert instruction I was spoiled with pizza, charcuterie and my mozz!!
Of all the experiences we did in Italy, this was the absolute highlight from a culinary perspective! Jessica led our mozzarella making, and she was so knowledgeable and encouraging that we honestly felt like experts by the end. The hospitality was just incredible; the team was so pleasant and made us feel right at home from the moment we arrived. The spread of food and drink provided was truly out of this world—beyond anything we expected. We even took our leftovers back to our farm in Tuscany and used them to make some amazing meals! Unlike other tours, the wine here was spectacular—so good that we bought a few bottles to take home. I would totally do this again in a heartbeat. If you want a perfect mix of top-tier food and genuine Italian hospitality, don't miss this!
Our family had the most amazing time at *Mozzarella Cheese Making with Wine and Food Tastings*! From start to finish, it was such a fun, hands-on experience. Jess was absolutely tremendous — patient, knowledgeable, and so much fun to be around. Sebastian was wonderful and even entertained my 15-month-old granddaughter, which made the experience even more special for all of us! I learned a ton about cheese making and Italian culinary traditions — now I’m even wondering how I can schedule some one-on-one time with Vincenzo to learn more. The mozzarella we made was delicious, and the wine and food pairings were fantastic — truly a taste of authentic Florence. It was the perfect mix of learning, eating, and enjoying time together as a family. We highly recommend this experience to anyone visiting Florence — it’s an absolute must-do!
This class was an amazing experience. Jess, our instructor was so enthusiastic, knowledgeable, and helpful. The Mozzarella was delicious. The wine was flowing. The wine from your vineyards is excellent. I am having a case shipped home, along with your delicious sauce, and olive oil. The generous amount of food you served us was delicious, lasagna, burrata, meats, and pesto. We also learned how to make the burrata. Thank you for your kindness and for your genuine Florence hospitality. Grazie, Francesca
I booked the Florence Mozzarella Cheese Making with Wine and Food Tastings as a solo traveler, and it ended up being one of the highlights of my trip! As it turned out, I was the only participant that day, but Jessica (I believe was her name) went absolutely above and beyond to make sure I still had an amazing experience. She was so kind, engaging, and knowledgeable — I never once felt awkward being there alone. The class was hands-on, fun, and surprisingly easy to follow. I learned the full technique of making fresh mozzarella from scratch, and the end result was some of the softest, creamiest cheese I’ve ever tasted. The wine and food pairings were delicious and perfectly complemented the experience. Although it might be a bit tricky to find some of the same ingredients back in the U.S., I’m so glad I now know the process and can try to recreate it at home. This was such a memorable and personal experience — highly recommend it for anyone visiting Florence, whether solo or with friends!
This was so much fun !!! One of the highlights of my Italy trip!! Great food and wine!! The setting was perfect and my teacher was so informative and had such a great personality!! I would highly recommend doing this if you are in Florence!!
This was certainly one of the highlights of our trip to Florence! We ended up being the only couple for the date and time we chose, so we had a very hands on experience. Jess was so warm and patient, explaining and demonstrating every step multiple times. Unlike pasta making, cheese making is apparently a lesser known/lesser practiced art, so it was particularly fascinating learning all the components. In addition to making, tasting and taking home your mozzarella, Jess also serves you a delicious light lunch/antipasti as well as prosecco and two selections of organic wines that they produce. Both wines were so good, I opted to have some shipped home. If you are interested in food and having a unique experience, I would say this is a can’t miss! I highly recommend if you have time for a specialty class during your travels!
Jess was excellent, patient, and the process was both unique and highly achievable on our own. We learned a lot and enjoyed ourselves quite a bit. Nice departure from a thousand pasta making classes available to tourists
Had a terrific time doing the cheese class with Jess in Florence! She was engaging, fun and a great teacher. Would highly recommend this experience!
This mozarella making class was so much fun! Jess is very knowledgeable about cheese making techniques and explained everything in a way that made it easy to understand as we prepared and shaped our mozarella cheeses. And you get a tasty snack after you are done making your cheese (and some delicious local wines paired with everything). My husband and I are so glad we decided to go on this tour, and would recommend it to anyone who loves cheese and loves to cook!

Was an amazing experience and I think I can actually do it at home after that! The cookbook will definitely help! Thanks for the wonderful teacher and the incredible products, high quality and delicious!
If you have time during your stay in Florence, this is an incredible experience. There are 100's of pasta and pizza making classes through out the region ( i am sure they are all equally amazing) - but this was the only Cheese making class we saw. We were lucky enough to have Cheese Maker Jess as our instructor - she is amazing! Jess is a patient instructor who was able to teach me how to braid Mozzarella.. (i am not a quick learner apparently). Jess has such a unique world view and a passion for the food and wine of the region. her understanding of the importance of supporting local is admirable. Remember to come hungry as there is an "Italian Snack" at the end of the class where you get to eat your efforts.. This was great experience and well worth it.
A perfect evening to enjoy an Italian classic! Wonderful host and you don’t leave hungry! Jess was a perfect host and I would highly recommend and encourage anyone to do this. I went with my mom and sister and we wanted something different to a food walking tour and this was such a pleasant find. We also enjoyed our home made cheese with food and wine and enjoyed chatting to Jess who didn’t rush us out and we felt very well looked after
Cheese making course was super fun and thorough. Jess and Giuseppe explained every step of the way well and they’re just genuinely kind people. We learned how to make a few different shapes of mozzarella. The lunch at the end of the course included wine, meats, lasagna, bread, and tomatoes with the mozzarella you made. You get to take the rest home afterwards. They answered all my questions and had lots of recommendations for exploring Florence too. Had such a lovely time

⭐️⭐️⭐️⭐️⭐️ Our mozzarella-making class was an absolute highlight of our trip! From the moment we arrived, we were welcomed like family in their beautiful family restaurant. The experience was hands-on, fun, and we learned so much—not only about making mozzarella, but about the love and tradition behind it. Best of all, we got to enjoy the mozzarella we made, along with the most incredible dishes they prepared for us: homemade meatballs, truffle oil creations, and the freshest caprese. Everything was absolutely delicious, and the warmth and hospitality made the experience unforgettable. Highly recommend this to anyone visiting—it’s more than a class, it’s a memory you’ll treasure!
This class was one of my favorites, and a MUST do, if you have any interest at all in the mozzarella making process! The instructor was energetic, fun, and informative. Having the class in a small restaurant setting was perfect when followed up with more wine, and light food beautifully set out. Thank you Vincenzo for offering this awesome experience!!❤️
Such an amazing experience!! The host was so knowledgeable and you could tell she really loved her craft. This plus the unbelievable food made this experience well worth it. Cannot recommend more
Super fun class! Mozzarella is super easy to make and so tasty! Highly recommend! Perfect on a hot summer day to keep you out of the heat.
The class was amazing, and our teacher was very sweet, patient and knowledgeable. The class ended with lots of delicious food (including the mozzarella we made) and a lovely chat with the teacher and the other participants. Would definately reccomend!
I went on my birthday and when I tell you I made the best mozzarella EVER, I mean it. I struggled a little with shaping, but Francesca was super kind and patient. 100% foreigner friendly, totally recommend!!
This class was incredibly fun! You truly get to experience both Italian cooking and culture all in one class. It’s a great hands on experience to learn from experts and see how it’s done. After making mozzarella, we were able to talk intimately with the cheesemakers and learn so much! We tried what we made in different styles from pizza and charcuterie along with different wines.
I had never participated in a cooking class before, but this mozzarella making experience combined with wine tasting was extraordinary! The practical part of mozzarella making fascinated me: following the entire process from milk transformation to creating fresh mozzarella and stracciatella was educational and fun. The contrast between real artisanal mozzarella and what I had always eaten was incredible - the authentic flavor and silky texture are incomparable! The instructors guided us with expertise, sharing secrets passed down through generations. Tasting our fresh cheeses paired with selected wines created a complete sensory experience. A perfect activity for anyone wanting to immerse themselves in Italian gastronomic culture. Highly recommended!
